My research is focused on understanding the sustainability of food systems, with a particular interest in livestock production, dairy processing and agricultural waste valorization. Much of this work is centered around using Life Cycle Assessment (LCA) to understand impacts such as resource depletion (fossil fuels, nutrients soils), climate change (carbon footprint), water quality (water footprint and eutrophication), soil quality and most recently linking to social impacts (social LCA). I work with the dairy, (through the EI Dairy Process Technology Centre and AgriChemWhey), cereal (through Irish Grain and Feed Association and Origin Enterprises PLC; CONSUS) beef (through VALUMICS and Bord Bia) and agri-waste (through AgroCycle, BEACON) sectors in Ireland and Europe.
